Term

Meaning

Certificate of Acceptability

The food-handling licence required under Regulation R638 of 2018, issued by an Environmental Health Practitioner after inspection. For a truck it attaches to the vehicle registration number, and it is issued in the name of the Person in Charge rather than the company.

Commissary

The licensed preparation kitchen behind the fleet. It is what allows a truck to serve 145 covers in a market service, and it is the premises most of the compliance sits against.

Contribution per truck-day

Revenue less food, crew, pitch fee, running costs, packaging, waste and card fees for one truck on one day. R3 704 at the mid-plan mix; the unit on which break-even is calculated.

Covers per service

The number of people served in one service. The dominant driver in this business: a 15% movement swings mature EBITDA by R2 746 524.

Effective trading days

282 days a year on a six-day week, less 5.5% lost to weather, breakdown and cancellation, giving 266 per truck.

Fixed-per-service costs

Crew, pitch fee and running costs — R2 460 on a weekday street service, incurred the moment the truck opens regardless of how many people arrive.

Person in Charge

The individual legally responsible for food safety management, in whose name the Certificate of Acceptability is issued. The certificate does not automatically transfer when that person leaves.

Pitch

A place to trade, obtained through a municipal permit, a private site agreement or acceptance onto a market roster. None is permanent and none is transferable.

Regulation R638 of 2018

The regulations governing general hygiene requirements for food premises, the transport of food and related matters, under which the Certificate of Acceptability is issued.

Small Business Corporation rates

The graduated South African tax rates applying to qualifying small companies, under which no tax falls in this projection because of assessed losses carried forward.

Truck-day

One truck trading for one day. The unit of account from which every number in this plan derives.

Utilisation

Truck-days traded divided by effective days available. 78% in Year 1 rising to 98% at maturity.
