Operational Model
The throughput ramp, the yield and conversion and the capacity and shift planning underpinning operations.
Operations are organised to deliver consistent, food-safe, traceable
product at scale while protecting animal welfare and maximising yield.
The operational ramp is paced to match the build-out of processing,
feedlot and supply capacity.
8.1 Throughput ramp
Throughput scales from 38,000 head in Year 1 — a deliberately
conservative commissioning year — to 240,000 head by Year 5, well within
the design envelope of a modular abattoir operating at increasing shifts
and utilisation. The ramp is gated by supply onboarding and export
accreditation rather than by plant capacity, de-risking the volume
build.
8.2 Yield and conversion
The model assumes an average live procurement weight of approximately
32 kg and a carcass yield of around 46%, producing roughly 14.7 kg of
carcass per animal before value-added recovery. Feedlot finishing
standardises weight and condition, improving both yield consistency and
grading outcomes. Continuous-improvement targets focus on reducing
shrinkage, lifting dressing percentages and increasing fifth-quarter
recovery rates.
8.3 Capacity and shift planning
The abattoir is designed for modular scaling. Year 1 operates a
single shift at modest line speed during commissioning; subsequent years
add line speed, hours and a second shift as throughput rises, spreading
fixed costs across more units and driving the EBITDA-margin expansion
shown in the financial plan.
