15.1 Organisational Structure

The management team combines deep hospitality expertise with commercial and financial acumen. The lean initial structure ensures operational efficiency while providing the strategic capability to execute the growth plan. The founding team will be supplemented by an advisory board comprising a seasoned restaurateur, a retail property specialist, and a digital marketing expert.

15.2 Key Management Roles

Managing Director / Founder: Responsible for overall
business strategy, investor relations, brand development, and expansion
planning. Brings a minimum of 8 to 10 years of relevant hospitality or
fast-casual restaurant management experience, with a demonstrated track
record in new concept launches and multi-unit management.
Operations Manager: Oversees day-to-day restaurant
operations, supply chain management, staff performance, quality
assurance, and health and safety compliance. Requires a minimum of 5
years of restaurant operations experience with strong food safety
certification.
Head Chef: Leads menu development, kitchen
operations, staff training, and quality standards. Requires formal
culinary training with specific wood-fired oven expertise, and a minimum
of 5 years of experience in Italian or Mediterranean cuisine.
Finance and Administration Manager: Manages
financial reporting, budgeting, payroll, regulatory compliance, and
investor reporting. Qualified CA(SA) or CIMA with restaurant or retail
financial management experience preferred.

15.3 Training and Development

All staff will undergo a comprehensive onboarding programme of two weeks, covering food safety certification (City & Guilds Level 2 equivalent), FireStone standard operating procedures, customer service excellence training, POS and technology systems training, and fire safety and emergency procedures. Ongoing development includes quarterly skills refresher workshops, annual performance reviews with development plans, and a career progression pathway from entry-level to management within 24 to 36 months.
