Owner remuneration is a real cost from Stage 1 at R72 000 rising to R216 000, and it is deducted before EBITDA is struck. That matters to a lender: the debt service cover quoted throughout this plan is calculated after the founder has drawn a living, which is the basis a lender uses and the basis on which the household does not quietly consume the working capital.
Combined labour and owner remuneration is 64.7 per cent of the fixed cost base at Stage 1 and 56.3 per cent at Stage 5. The remaining lines, transport, repairs, administration, security and insurance, are modest individually and together are what a farm can genuinely control when cash is short.
