Growing rooms and climate control together are 63 per cent of the capital budget, and both must be complete before a single mushroom is sold. The cold room, packhouse and delivery vehicle are front-loaded because a five-to-seven day shelf life makes the cold chain a condition of trading rather than an efficiency. Site works are front-loaded for the same reason: one-directional clean-to-dirty workflow has to be designed into the layout, not retrofitted around it.

Roughly eight weeks from cook-out to final flush for button, and about five for oyster. The plan’s improvement from 5.4 to 6.7 crops a room a year comes almost entirely from compressing the days between crops rather than from shortening the biological cycle, which cannot be rushed.
