Cumulative break-even sits at 4.25 per cent crop loss. At the planned 6 per cent the business loses R990 711 over the plan period; at 10 per cent it loses R3 224 296. Hygiene protocol is not an operating detail in this business — it is the business.

The practical controls are unglamorous and non-negotiable: filtered air handling with positive pressure in clean areas, strict one-directional workflow from clean to dirty, dedicated footwear and clothing per zone, thorough cook-out between crops, and disciplined fly control. Trichoderma and bacterial blotch do not announce themselves in advance, and by the time a crop shows symptoms the decision has already been made three weeks earlier.
